Goat cheese pistachio encrusted chicken


Yesterday was PB’s last day here, although he’ll be back next weekend yay! I wanted to spoil him with a nice lunch at home so I decided on my own variation of Kath’s variation of Robin Miller’s Roasted Chicken with Goat Cheese-Macadamia Nut Crust. sounds complicated? It really wasn’t I swear!!

Here was my way of making it:

4 6 oz chicken breasts (sliced thin)
2 oz crumbled goat cheese
3/4 cup crushed pistachios
Annie’s honey mustard salad dressing

1. Preheat oven to 380 degrees, line pan with tinfoil (unless you don’t mind a long cleanup process, which i didn’t have time for)

2. Wash each chicken breast and then place it on the tinfoil. Brush each one with a little bit of the honey mustard. I only used 1/4 cup total.

3. Sprinkle with the goat cheese and pistachios. Cover with more foil

4. Bake for 20 minutes, then uncover, set oven to broil, and cook for 5 more until the cheese is a little brown.

5. Enjoy!

Tips:
-Crushing nuts or any other item (I always crush up Kashi TLC Crunchy bars for my yogurt) is super easy. Just place the nuts in a ziplock bag, and bang away your frustration with a mallet until the crushed item is as finely or coarsely crushed as you like it. It never takes more than 20 seconds for me- at most.
-Don’t be afraid to try this recipe with many variations.. I think they would all work nicely.

Results
I will definitely be making this time and time again. This is a great recipe. It was so simple, had few ingredients, and is so versatile… If I didn’t have such an abundance of pistachios I would have used crushed almonds or walnuts, and I always have feta so I wouldn’t mind using that next time. I used the Annie’s dressing because I find that normal honey mustard always leaves too heavy of a flavor and I didn’t want that.

PB and I didn’t end up having time to enjoy this at lunch so I sent it home with him in his lunch pack (yes I send him all the way home to Philly with lunch!!!). He just had it and loveeeeeed it!

  1. wow- that looks so good. whenever i hear “encrusted” i always think unhealthy and time consuming but apparently thats not so!
