Menu: Healthy Super Bowl Party

Don’t ask me who is in the Super Bowl, because I have no idea.

I do, however, know what I would make for a Super Bowl party. Add a healthy twist to old favorites, and you can enjoy this Super Bowl guilt-free… unless, however, you are like me and fall asleep halfway through the game!


Healthy SuperBowl Party

Snack Tray:
Sabra Hummus
Stacy’s chips, unsalted pretzels, carrots, and cucumbers

Healthy Turkey Burgers
Veggie Burgers
Baked Sweet Potato Fries (recipe below)
Baked Potato Fries
Turkey Bean Chili w. cornbread (made from a mix)
My favorite salad (sans chicken)
Exotic fruit tray (mango, pineapple, kiwi)
Blue Moon beer & Unsweetened Iced Tea


RhodeyGirl’s Baked Sweet Potato Fries
Serves 2

1 large sweet potato
olive oil spray
kosher salt and pepper to taste


Preheat the oven to 400 degrees. Boil a pot of water. Wash your potato and cut to the desired fry shape. Boil them for 5 minutes. Meanwhile spray a baking sheet with olive oil (or Pam). Drain the potatoes and spread them on the sheet in one layer. Sprinkle with salt (and whatever spices you want) and spray with more oil or cooking spray. Bake at 400 for 20 minutes. Flip each fry carefully (I use tongs). Put the heat up to 425 and pull out when they reach the desired brownness/crunchiness.

  2. I have never boiled my potatoes first! However, many times mine end up mushy instead of crispy if I don’t have the oven up high enough. Do you know if boiling helps make them crispy??

    • Jessica- I boil them first so that they are soft on the inside. Then I put the heat up high (400 or higher) so that the outside gets crispy. Since the inside is already cooked the oven time is just to crisp up the outside. Mine are crispy on the outside, soft in the middle!

  4. I’ve never boiled mine either but still get the soft inside, crispy out. Hmmm… different ovens! πŸ™‚

    I’m in charge of bringing my own snacks to the party haha since everyone else is eating chili and brownies.

  6. I have no clue who’s playing in the Super Bowl either, but I married a football lover so I at least need to participate. We always watched basketball in my house growing up, so I have no idea what goes on in this sport!! πŸ™‚

    I love the healthy party ideas, everything about Super Bowl seems so unhealthy to me. Last year I made some pretzels (healthy) and a ‘jalapeno popper’ dip (so unhealthy). I haven’t decided what I’m bringing this year (we go to a friends’ house who throws a pot luck party). Hope you have a good time this weekend!
