Healthy Turkey Burgers

What are you going to make for SuperBowl Sunday? Oh, you don’t know? Well, I’ve made that decision for you! Make these turkey burgers!

I absolutely love every version of these turkey burgers I have ever made. Adding mushrooms makes them so soft and tender, and the other additions keep the burgers flavorful and fun. These have lots of added vegetables, making them high in volume and lower in calories than your average burger. I made these for PB and I for dinner the other night, and from start to finish the whole process only took me 35 minutes. I love meals like that!

Healthy Turkey Burgers
Serves 4 (makes 8 burgers)

1 lb organic lean ground turkey
1 large white onion, diced
10 baby bella mushrooms, diced
1 can artichoke hearts, drained
4 oz crumbled feta cheese
1 egg
kosher salt & pepper to taste
olive oil spray

1. Spray a skillet with olive oil and place over medium heat. Once hot add the onions and cook, mixing every couple of minutes, until softened, about 5 minutes. Add the mushrooms and kosher salt and pepper to taste and cook until softened. Meanwhile, dice your artichoke hearts.
2. Put the softened mushrooms and onions in a large bowl, and put the used skillet to the side. If you have time, let the mushrooms and onions cool a little before adding the other ingredients. Add the turkey, artichoke hearts, feta, and egg. Mix with your hands until combined, but do not overmix.
3. Heat the skillet up over medium high heat and spray with olive oil. Meanwhile, form the turkey mixture into 8 patties. Place 4 of the patties on the skillet and cover. Flip after 4 minutes and turn the heat down to medium low. Continue cooking until completely cooked through. Place aside and repeat with the remaining 4 patties. Enjoy!

-This weekend PB and I are going snowboarding. That is awesome for 2 reasons: 1. I LOVE snowboarding and 2. I love a good excuse to skip a long run! Mwahahaha!

-Have I mentioned I am going to JORDAN this summer with 14 friends and family? PB and I are so excited- I haven’t seen some of my aunts, uncles, and cousins in 4 years!!

  14. He was a handsome man! and while I would LOVE turkey burgers at my superbowl party, I don’t think anyone else would eat them. I’m making chicken wings…in the crockpot. it cuts out tons of fat, and no flavor!

    I spent a month in Isreal in 99. We went over to Jordan for a few days and spent a day in Petra. It has to be one of the MOST AMAZING places in the world.
