Goodbye Pizza, Goodbye House.
What a weekend! Sometimes I feel like I am in the middle of a tornado, spinning and spinning around, not sure which was is up and which was is down! In celebration of my last weekend in my first home (condo), I made extra special pizzas for PB and I.
A play by play.. no bowls means I had to get creative:
I like to put the dough in alone but WITH the sauce. I have found that makes my pizza the crispiest for some reason.
Yum yum, with this week’s SPECIAL toppings… artichoke hearts, kalamata olives, and measured fresh mozzarella and shredded mozzarella.

And my mini pizza with less cheese.. I had that plus one slice of the above, and some nutritionally empty but terribly crunchy iceberg yum!
This pizza was so good PB and I ate a pound of dough in two days. Woah. Here’s our dough recipe (not sure where we found the original one but we’ve tweaked it a bunch):
3.5 cups of unbleached flour
1 package of instant yeast
1.5 cups warm water
1 teaspoon sugar
1 teaspoon salt
about 1/2 tablespoon olive oil
1. Put the yeast and sugar into the water and stir. Let sit for 5-10 minutes until the mixture becomes frothy.
2. Put the flour and salt in a large bowl. Add the salt and the yeast mixture and stir. Once it starts to come together leave it for five minutes.
3. Come back and dump the flour mixture onto a lightly floured counter. Knead the dough until it comes together and looks nice and smooth, about 5 minutes max. Oil the bowl (about 1/2 tablespoon) and dump the dough in. Cover it with plastic wrap and let sit for 1 hour until it doubles in size. While the dough is rising preheat the oven to 450-500 degrees.
4. Punch down your dough and knead it for another minute or so before forming it into your pizza. Place it on an oiled baking sheet. I just pour 1 seconds worth of oil (again, about 1/2 tablespoon) on the sheet and then rub it around with a paper towel.
My tips on making a yummy pizza:
A. Preheat the oven for a lonnnng time. You want the oven HOT when you put your dough in there.
B. Once your dough is formed on your baking sheet let it sit for a few minutes to rest. Then press your fingers all over it to give it bumps. Add your sauce before the first bake so that it has some weight to hold the dough down (so it doesn’t bubble too much)
C. Less is more! Don’t put heavy layers of toppings because it will weigh down the pizza too much.
We literally NEEDED this pizza this weekend. I didn’t realize how much stuff I had and how much work we had to do. I also didn’t realize I would be so sad. It was my first house, my first sign of independence. While I am not selling it, I won’t be living in it anymore. In fact, I am blogging from (gasp) dad’s house, where I will live for the last 14 weeks before the wedding. I’ll be back tomorrow with a packing recap.
