Easy but Impressive Caprese Stackers


It is so easy to make a nice appetizer for friends! One of my favorite options is caprese stackers. It is so simple I am almost embarrassed to make it its own post! But sometimes the simplest foods are the tastiest.

I make my pesto in big batches and then freeze it in old school ice cube trays so I can use a little at a time. I defrosted 2 cubes worth for this.

Ingredients:
defrosted homemade pesto*
2 ripe tomatoes, sliced
2 large mozzarella balls, sliced

Since the focus is on the ingredients themselves and they won’t be masked by anything, you want to be sure to get the highest quality tomatoes and mozzarella you can find. Simply stack the mozzarella and tomato slices, putting a thin layer of pesto between each layer, and enjoy!

*If you don’t have homemade pesto, feel free to use some kosher salt and a drizzle of fine olive oil!

Ipod Question:

I ran outside for the first time since last October. It was chilly but boy was it rewarding! Anyway, my ipod conked out after 1 mile, like it always does in the cold. Does that happen to anyone else? Any tips on making it work in the outside cold?

and randomness… I am so excited for this weekend! Taking PB snowboarding for the first time!!! That was his Valentine’s surprise! His friend’s wife and I are taking the boys away to the mountains for the weekend! I can’t wait!!!! The ski crew is arriving late tomorrow night from Philly to crash at my house before our early drive up on Friday. What should I make for them as a healthy, filling late night snack? Send me links to recipes or even post recipes in the comments! I want to be testing more!!!!!

This will be me in 2 days!!! (in the same ski jacket I’ve had since 2000!)

  3. i would say to get a holder for the ipod and then stick it someplace under your jacket or something. mine used to do the same thing, it would freeze because i left it in the car overnight, i would have to thaw it out with my hairdryer.. lol

  4. LOVE caprese! Hmm maybe for the ipod you could get one of those arm bands and wear it under your layers so it stays warm?

  5. My ipod’s never frozen when I’ve run with it in the freezing cold – but probably because I always keep it tucked very close to my body which keeps is warm.

    I found you site thanks to Amy at What Do I Eat Now, and I just had to comment about the iPod issue!

    They do tend to freeze up in the cold, so if you’re running and you have one of those arm band things, maybe strap it on inside of your shirt/sweatshirt/whatever so that it’s closer to your body? It might help keep it warm!

    Caprese is one of my favorite things to make as well. Yours look great!
